I used to work for a flower shop and color variance is one of those things that brides never understand! Flowers are a living, natural thing... there is NO WAY to ensure that the flowers you pick out when planning your wedding will be the same shade as the new flowers that are used weeks (or even months) later for the wedding. Often times the flowers don't even come from the same grower. Brides need to understand that this is part of nature, not the florist being careless and making a mistake.
