Just because the phrase is "rehearsal dinner" doesn't mean that you can't have a rehearsal luncheon.

While it's true that the bride (and groom) have a lot to do the day before the wedding, scheduling a lunchtime or afternoon rehearsal and meal will enable the couple to check off their final major to-do early and give them a quiet evening to relax and enough time to get a good night's sleep before the big day. Also, a luncheon will be less expensive than a formal dinner.
